Ingredients:
- 14 oz canned salmon, drained
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped red bell pepper
- 1/4 cup mayonnaise
- 1 egg, beaten
- 2 tablespoons chopped parsley
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
In a large bowl, flake the salmon with a fork
Add breadcrumbs, onion, red bell pepper, mayonnaise, beaten egg, parsley, Dijon mustard, lemon juice, garlic powder, salt, and pepper
Mix until well combined
Form the mixture into small patties
Heat olive oil in a skillet over medium heat
Cook the salmon croquettes for about 3-4 minutes on each side, or until golden brown and cooked through
